I bought this with my wheat and egg allergy son in mind.
I made the Pumpkin Spice Muffins on page 24, but doctored them up with chocolate chips, shredded coconut, and other spice cake spices (sorry, it's a secret!) and it was delicious!
I made the pork tamales on page 114. It was my first time making tamales so I probably made about 12 pounds of meat, half pork and half beef. They were a success. I was glad I made so many because they were a lot of work!
I made the pancakes on page 32 and liked them as well.
This cookbook has a delightful variety of recipes. There are many recipes that are "regular", that don't seem to be for someone with special dietary needs, but if the tamales were any indication of how the other recipes will taste, then I think that will be an added bonus to the recipes that do call for alternatives to wheat flour.
I'm happy with this purchase and recommend this book. As I try other recipes, I'll update this review.
It seems to me that in the last 5 years or so, GF recipes have come a LONG way! Check out my other reviews to see what my favorite GF cookbooks are. This is one of them. I used to look for recipes with garfava flour and had a GF bread cookbook. These three latest books utilize different flours to make lighter mixes, which result in lighter and more "normal" textured baked goods. Sorghum flour seems to be a good one to have.
